Yummy Meatball Subs

Ingredients:

Frozen fully cooked meatballs

Jar of spaghetti sauce

White hogie buns

Mozzerella shredded cheese

1. Cook meatballs according to package directions.

2. Heat up spaghetti sauce and then combine with cooked meatballs.

3. Butter and toast your hogies.

4. Top hogies with meatball/sauce concoction and sprinkle cheese on top.

5. Eat with a napkin! :)

So easy and so yummy!!!!

Seven years of sweetness

Seven years ago today, C and I had our “DTR”. Now I don’t know if one of our friends at Baylor started this term or if it is a universally accepted term, but a DTR is a discussion in which you “determine the relationship”. Where you figure out if you are dating or just hanging out or what exactly everyone thinks is going on! So we had this DTR in a swing at Baylor, the one at the back of the sub near the old place where the fountain was.

Here is the story. It was my sophomore year. We had known each other throughout my freshman year through the church college group but just as friends. Over the summer we occasionally chatted online while I was home for the summer. After we got back and had been back a few weeks, he asked me if I wanted to go with a big group to the Third Day concert in College Station in October. I said sure, but somehow thought he asked my friend and I and didn’t think of it as a date at all. Then over the course of the next few weeks, we just did random stuff. Went to Wendy’s, went to a tennis match, Sonic run, etc. Then he asked me on what I consider our first date. He had to drive down to Temple to pick up a friend from the airport and asked if I wanted to go to dinner with him and then ride down with him to keep him company. After that we had our DTR.

After almost a year of dating, we got engaged in that same swing! It’s kinda our swing.

You wanna know something sad…. it’s NOT THERE anymore!!!!!!!!!!! Isn’t that AWFUL!???!?!?! Baylor, what are you thinking??? That swing was probably a lot of people’s “swing”. There was even a plaque there in the ground that some other couple had put there. Over Labor Day, we were in Waco and went by campus. We parked behind the SUB and went to go sit in our swing, only to be dismayed to find that the swing wasn’t there, in fact, the whole branch was gone! So at least they didn’t just remove it for no reason, maybe the branch broke or was diseased or something and therefore the swing had to go too.

Anyway, that is not the point of this post. The point is that for the past seven years, C and I have been together. And he is the absolutely wonderful. There is not a better boyfriend/fiancee/husband that God could have given me! He is perfect for me. I can’t imagine that anyone could love me better. Thanks C for seven years of awesome-ness. Here is to 77 more!

Getting back on the wagon

Yes I know. Lack of blogging. Sorry. No one else seems to be much either. The only people reading this are probably people with google reader and my mom. :) Everyone else probably stopped checking in.

We have been eating out ridiculously lately. So today I tried to get back on the wagon. Lots of wagons actually. Cooking, menu planning, coupons, taking reusable grocery bags, buying organic and now blogging. All these things I think are important but am rarely able to do them with any consistency. So today I perused the freezer to see what we had, checked the balance in the grocery section of mvelopes, printed off some coupons, checked the HEB flyer for the current combo loco, and headed to the store with my list, coupons, and bags. I did pretty well, but one thing that I cannot seem to do well is actually eat what I buy. Some things we eat up fast, but there are so many things that just stay in our pantry and never get eaten. Like the case of chex mix bags that we bought at Sam’s.

Now I have a happy tummy, full of a meatball sub that was inspired by the meal at Kara’s for home group several weeks back. I have been dreaming of those meatball subs ever since then and I finally bought stuff to make them, after having to hunt all over HEB for the meatballs. Check back later this week for the recipe.

I checked out a new store the other day, Charming Charlie’s. My friend Jess raves about this accessory store where things are grouped by color. I thought it was only jewelry, since that is what she usually gets there. But no! It is all kinds of accessories including some super cute purses! I think I am going there next time I need a purse! I got a fun silver necklace and a pink beaded necklace with earrings. Since my ears aren’t pierced, the earrings will go to the first commenter who wants them. :) They are just dangly pink beaded earrings, really cute!
